  NUTRITIONIST APPROVED SWEET POTATO FRIES

French fries are one of the most delicious and top 5 worst foods that any of us can ever eat. They contain what is considered “bad” fats (trans fats) and  they are made out of “bad”  carbohydrates that means a higher level of blood sugar. Baking them can eliminate the trans fats but the carbohydrates and elevated blood sugar is still there.
Baked sweet Potato fries on the other hand are not only delicious but are also jam packed with essential vitamins and nutrients, contain almost no fat and actually help combat the signs of aging.

Ingredients:

-2 lb. Orange-fleshed sweet  potatoes/Yams

-2 Tbs. olive oil

-1/4 tsp. coarse Himalayan  salt, 

-3 Tbs. grated Parmigiano-  Reggiano cheese

-2 Tbs. chopped fresh flat-  leaf parsley

-1 garlic clove, minced

 

Directions:

-Preheat an oven to 450°F
-Rinse and dry the sweet potatoes. Cut the unpeeled potatoes lengthwise into slices 1/2 inch  thick, and then cut each slice into batons about 1/4 inch (6 mm) wide and 3 inches long.
-Place the potatoes on a baking sheet. Drizzle with the olive oil, sprinkle with the 1/4 tsp. salt and toss to coat. Spread the potatoes out evenly.
-Roast, stirring with a spatula halfway through, until the potatoes are tender and browned on the edges, 20 to 25 minutes.
